honey ricotta herb dip + wasting less food

I have to admit, I am not always the best when it comes to using up everything in my fridge before it goes bad. My husband, bless him, has tried for YEARS, to get me to improve in this area, and I'd like to say things are improving, but just this week I tossed half a bag of green beans and a completely unused bouquet of green onions because they went bad on my watch. I don't say this proudly. I hate wasting food, and I try to find ways to use up kitchen scraps often, but maybe the trick for me will be just buying fewer groceries, because even with all of my tips and tricks, I still end up with a few things at the end of the week that I need to toss. Sigh.


One thing I do to curb food waste is using up kitchen scraps in smoothies, juices, and dips. And while, admittedly, I have a long way to go, I have made some great recipes in the hopes of not letting another grocery item go to waste. This ricotta honey herb dip was exactly that, and it was delicious.


I had half a container of ricotta and some wilted herbs staring at me, and the clock was ticking. I used my Ninja, which I'm obsessed with and swear by (I know there are Vitamix fans out there, but I think the Ninja is almost it's equivalent, but like $300 cheaper, sooooo, it's the best, sorry.) I blended about 1/2 cup of ricotta with a few table spoons of honey (to taste), and the herbs I had leftover (parsley, chives, basil, mint, but really any herb combo would be great in this!). I spread the dip on some homemade bread and fell in love.


The combination of flavours here is amazing - fresh from the herbs, creamy from the ricotta, sweet from the honey. It's just such an interesting taste and so perfect for hot bread (you can find the bread recipe here).

I'd love to improve drastically in the area of food waste, and making up fun recipes on the fly is one way it's been a less arduous goal. Try it!

    Homemade soup! That's one way we use up a lot of things in the fridge. Yum! It would go well with your bread, too. Unfortunatley, we still end up throwing out some things as well.
