EVERYBODY's BIRTHDAY CAKE!

Our kid's birthdays are almost exactly one month apart, one after the next. August-October hosts all three kid's birthdays, my birthday, and our wedding anniversary. Fear not, we're good at celebrating! While weren't not huge on birthday parties yet, and Brad and I don't exchange gifts and have never given cards, we always always mark a birthday with a dance party, a family outing, and a birthday cake.

 

It's been a few months since we've had a birthday to celebrate so this cake has taken a bit of a back seat (to Christmas baking, donuts, pop tarts, etc.). Well, I'm delighted to announce that we had reason to bake up a birthday cake last week... my sister gave birth to a beautiful baby girl! Yes, I am an auntie!! To one precious Addison Cameron.

Growing up, we had such strong relationships with our cousins. I'm so excited for our kids to finally have a cousin and even though we're not near by, I wanted to start from the beginning with encouraging that relationship. So upon hearing the glorious news, we promptly made a birthday cake and celebrated baby Addison, an answer to our prayers for many years.


This recipe makes two cake rounds. I usually bake both, and freeze the extra. Most 9" cake pans fit perfectly in a large freezer zip-lock, fyi! But if you want to make a two tier cake, go right ahead! I find the two-tiers hard to cut small enough (especially for the kids), so I stick with a single tier cake.


I make this simple vanilla cake year round because there are so many varieties you can whip up. Add the zest of any citrus fruit to the batter and icing for a citrus cake, swap the milk for flavoured tea (peach ginger is amazing!) for a subtle change, or add loose leaf tea into your batter. Usually I make it plain and without icing - the perfect sweet, but not too sweet treat, but birthdays always call for icing... and sprinkles!

EVERYBODY'S BIRTHDAY CAKE

1 cup butter
2 cups white sugar
4 eggs, room temperature

2¾ cups all purpose flour
2¼ tea spoon baking powder
pinch salt
///
1 cup milk
1 table spoon vanilla extract

Start by creaming together the butter and sugar, then add the eggs one at a time. 
Then, add alternate between adding the sifted together dry ingredients and the vanilla milk. A little bit of flour mixture, a little bit of vanilla milk, until you're all together happily sharing a bowl.

Bake at 350 for 25 minutes and celebrate life!

    1. good question! it's always a random blend of butter and icing sugar with a dash of vanilla extract, pinch of salt, and little bit of milk or cream. The problem is, there are no exact measurements because it always depends on the temperature of the butter and in the room (hot/melted required much more icing sugar)so I kind of just gradually add and taste test all the way!
