Vegan Banana Ice Cream

So I know there have been some diet changes around here lately... Switching to almond milk, trying to do organic for some of the worse offenders in the food world (Dirty 12, meat, etc), but I promise it stops there! We have NOT gone vegan, we love our 35% whipping cream, omlets, and meats wayyyy too much to even consider it.

So why vegan ice cream? Because its darn easy to make (2 ingredients!!) and a healthier option for us. It's not replacing regular ice cream, but since we hardly ever eat ice cream anyhow (and never keep it in the house), I figured I'd try it since it takes 5 minutes to make.

Verdict? Very impressed. Kids, especially, loved it. Guilt-free, healthy, cheap to make (making real ice cream requires much more expensive cream), lactose-free, fast. Give it a go!

Vegan Banana Ice Cream:

1. Freeze *slices* of banana ahead of time.
2. Blend frozen slices with Vanilla Almond Milk.
3. Serve immediately.

Also, I think this could work with mangoes or avocados but I haven't tried it. Any frozen fruit with a creamy (so not peaches, berries, etc) texture is what you're going for.

Enjoy!
