thinking of Kentucky...

We spent almost two months in Louisville, Kentucky last summer while Brad studied for his MDiv at Southern Seminary. It was fine and we met some wonderful people, but it wasn't easy. I was pregnant, Brad was very busy, and our car didn't have air conditioning, so Lily and I were somewhat housebound with daily temperatures reaching well over 32 degrees C (90 degrees F). But we had so many good times there as a family, and I'm excited to go back this year. Especially since our car has AC and I won't be pregnant :)

Lately I've been reading Adopted for Life by Russell Moore, a professor at Brad's school in Kentucky and Brad just went down there after New Years for a 2-week course, so it's on our minds all the more. Not to mention he brought back some Kentucky bourbon from his trip :)

So in the Spirit of our summer home away from home, you MUST make this insanely delicious dessert:

Bourbon Banana Pudding
{inspired by this recipe}
  • 3 large egg yolks
  • 3/4 cup packed light brown sugar
  • 3 1/2 tbs cornstarch
  • 1/4 ts salt 
  • 3 cups whole milk
  • 4 tbs bourbon 
  • 1 tbs pure vanilla extract
 To make:
Lightly beat yolks in a medium bowl.
Whisk together 3/4 cup brown sugar, cornstarch, and salt in a small heavy saucepan. 
Slowly whisk in milk, then boil over medium heat, whisking constantly, until pudding is thick, about 3 minutes. 
Gradually add hot pudding to yolks, whisking constantly, then whisk in bourbon and vanilla.
Cover surface with wax paper and chill until cold, about 2 hours.

For assembly:
pour pudding into a stem-less wine glass or other bar wear
 slice ½ a banana over every glass
top with whipped cream spiked with 1ts of bourbon

  3. this sounds SO great, cause i like adding bourbon in stuff..but i hate bananas.
